When you fly from Point "A" to Point "B" with a 7-hour flight:
If you look only at local time, taking off at 13:00 and landing at 15:00 may seem like only 2 hours of flight.
Using UTC avoids this confusion: you take off at 12z and land at 19z, which correctly shows 7 hours of flight time.

It avoids confusion across time zones and daylight saving changes, making communication, flight planning, and operations safer and more accurate.
